Every time I make a menu/grocery list, I ask J. if he’s craving anything specific (even though most of the recipes on my list, neither one of us have ever had before). Usually its my potato soup. This time, however, he threw two meals at me that he’s never asked for before: Meatloaf and Sloppy Joes. I’m going to have to find out my mom’s recipe for Hamloaf, there’s just none other. Yum. But Sloppy Joes–those I can do! So the other night, I came home from work, exhausted, with the beginnings of the three day MFH (Migraine From Hell) and decided to throw these together instead of the fancier meal I had planned on. Seriously people, these are so easy, and so yummy!
Adapted from Betty Crocker Cookbook Bonus Edition
1 lb lean ground beef (I’m not sure what mix mine was, we get our beef from J’s mom’s farm)
1/2 onion, chopped
1/4 cup celery, chopped
1 1/2 cup ketchup
2 Tbsp Worcestershire sauce
1 tsp ground mustard
1/8 tsp pepper
6 sweet pickles, chopped
Splash of sweet pickle juice
6 buns, split
In 10 inch skillet, cook beef, onion and celery over medium heat, 8-10 minutes until brown; drain.
Stir in remaining ingredients (except buns, of course. It made me laugh that the recipe actually said this!). Heat to boiling, then reduce heat. Simmer uncovered 10-15 minutes, stirring occasionally, until veggies are tender.
Fill your buns with beef mixture. (Noooo not THOSE buns!)
I always serve with more sweet pickles. Nothing goes better with sloppy joes than sweet pickles. If you disagree, you be crazy, man.
