Pineapple Rum April 24, 2010

Monday, my little sister turned 21! I went up to Purdue to celebrate with her–what an amazing night! I met a lot of great people, and K. had a fantastic birthday.

One of the girls introduced us to this drink–it’s kind of a duh. Not very complicated, it’s only two ingredients! But so, so delicious and refreshing, especially when you’re in a hot, crowded college bar. It’s super easy to make at home, for one person, and it can also be made in large batches for a party!

Pineapple Rum

1 cup pineapple juice
1 1/2 oz Malibu Rum

Shake with ice in a cocktail shaker, strain over ice and enjoy!

this is actually my favorite drink! except I order it w/ orange juice instead of pinapple. This drink is nice b/c you can do lots of different variation…since the Malibu comes in different flavors and it goes well with most citrus juices!
